On our hunt for the best dining experiences Singapore had to offer, we felt we generally hit the jackpot with Candlenut.
The restaurant was buzzing when we arrived at 8pm. It was the busiest (and most expensive) dinner experience we enjoyed during our time there.
It’s noted for its Peranakan food (again, a fusion of Malay, Chinese and Indonesian influences). It’s touted as being the world’s first Michelin star Peranakan restaurant.
We knocked back a Riesling that was described as being “chiselled with alert liveliness” which led to some lively banter, and then moved to a great bottle of chardonnay (Louis Jadot Marsannay Blanc, Burgandy, 2017). The latter was particularly enjoyable. Described on the wine list as “fine, open nose reminiscent of bananas, pineapples and lemon. Supple, rich and luscious, the wine has a remarkably long finish”. It was all of supple, rich and luscious but lasted a remarkably short time.
The photographs of the entrees and mains speak for themselves- and the empty dishes too.
But there was a side to the evening that is worth mentioning as well.
It was decided by several in our party of four that we would cap out the evening with some desserts. The epitome of post-purchase dissidence came in the form of the durian cake and the strange chocolate candlenut dessert.
There is a very sound reason why durian is banned in most places. The taste in the mouth is hard to remove- just like garlic seeps into the skin- the smell and the memory stayed with me for days. And it was not pleasant.
The other desert- a chocolate one- could be described as many things. My mouth recoiled on tasting this. The waitress sold this to us as saying that the chef was very proud to be the first person in the world to feature candlenut in a desert. Well, now I can tell you why that is, Sherlock. These two dishes almost ruined what would have been a near perfect meal.
Sweets aside, the savoury dining experience was one of the best that we enjoyed.
Oh Candlenut, lose the desserts and keep your Michelin star!
