Creative excellence from a confident experimental chef.
We visited for a birthday celebration. Tasting menu with 22 courses with 14 glasses of paired wine! (I prepared by not eating anything after breakfast!) We visited on a Thursday night. The place was not full but had a quiet smart casual ambience. The open kitchen was fascinating to watch. Some of the dishes were brought out by the chef prepared them. Service was friendly, informative and efficient. The food was creative with process, textures and flavour combinations. Interesting experiments with fermentation. Impossible to pick a favourite dish. The most surprising was perhaps the beef dish which was quite a surprise. (I won’t spoil it for potential diners!) The wine pairings were interesting and definitely wines that are only found in Spain. The chef patron Guerrero was at the pass all night. He came out to thank each individual table at the end.
DSTAgE creative and pushing culinary boundaries
The restaurant has an industrial feel and the first surprise is that they have no menu. Chef Diego Guerrero switches things up with incredible innovation and pushing culinary boundaries. Some dishes taste like something conventional only to then find out it has completely different ingredients than you would have thought. I didn’t love every dish or every wine/cider/kombucha but I appreciated the creativity and taste/smell/amaze. Service is great and Diego is very approachable.
Overrated
We were a group of 5 people eating for the first time since it is very famous and we wanted to try it. The service is very attentive and pleasant, but the atmosphere is very average. The place is not cozy or pleasant, and the menu was quite disappointing. There was no dish that was not bad, the problem is that there was none that was really good or tasty. Instead of using seasonal products or more conventional ingredients so to speak, they seemed more like products made in a laboratory, and that's how it seems to be. Many experiments, many fermented ones, which I'm not saying has its merit due to the production techniques they use, but I don't think the result is worth it. We really didn't like anything we tried. It's not worth it from my point of view with all the good restaurants in Madrid.
Unique and unforgettable experience
An unique and unforgettable experience. We reserved the 15-course menu. In our opinion, there is no weak dish, no letdown, no filling: everything is continuous surprise and amazement, both in the presentation and in the variety of flavors. We were splendidly served by the room staff (I think the waiter who received and served us mainly was called Mario, many thanks to him and the rest of the staff) and by Diego Guerrero himself, who kindly explained several dishes to us. We enjoyed it very much. Oh, and I would also like to highlight the musical selection: it is not every day that you can listen to Lola, by The Kinks, in a Michelin-starred restaurant, instead of that "muzak", that elevator music that is as common as it is not very risky. Thank you very much and, I hope, see you soon!

Innovative, surprising and highly recommended.
It was a 15-course tasting menu, it is not cheap, but you pay for the exclusive. Very innovative, elaborate and exquisite dishes, a pleasure not only for the palate, but also for the senses, sight, smell, and hearing (since they explain the dishes very well). One of the ones we have liked the most so far, without underestimating the previous ones we have tried. If you have the opportunity I recommend it.
Disappointed
We have been well received, but they insist that you have to order 18 dishes to have an exceptional experience, which I do not recommend. Everything was strange, without noble products. The ox tongue was unexceptional, the sheep tartare was bland and the experience with fermented foods was horrible. How can they serve something like that to serious customers? Moldy corn and the price is too high for what it is.

A complete delight
We are completely delighted with our experience at this restaurant. We were most impressed by the creativity of the menu, the involvement of the chef himself and the staff in presenting the dishes. The wines are perfectly paired with each dish. We also liked the pleasant and relaxed atmosphere. One of the best Michelin 2 restaurants we've been to so far.
Restaurant of the year for me.
My restaurant of the year by a country mile. We were so lucky as first of all we got massively delayed leaving the hotel and then called to say we would be 30 mins late to find out I had got the booking wrong by 30 mins - thus running over a hour late. The highlights: 1. the low key entrance 2. the warm greeting from the staff and their low key perfect attentiveness and enthusiasm for the food throughout. 3. the calmness and total serenity of the service - we had the perfect table with a clear view into the kitchen 4. most of all the FOOD - I cannot even begin to describe it but can taste vividly loads of the courses 3 months later and probably for a lifetime. Stand outs where all 10 of the initial small plates. IF I am going to be really picky the desserts where not at the same high levels of quality but that is some bar. Plus we were 60 mins late to sit down for lunch. 5. the cost. Unbelievably good value for money.
One of the best experiences ever
Well, we would have loved to visit DSTAGE for a long time, but every time something came up. Finally it was our turn to experience Diego and his staff. Everything was out of this world ... food, drinks and service. A third star must be just around the corner. The decomposed sushi was really a treat. I am a dessert person, but didn't really miss dessert at all.

Here you will sit for between 2-3 hrs eating a journey of mushy bitter dishes one by one. A dish arrives described as Chorizo (served in some vaguely undefined mush) only to find after you've consumed it - surprise! That wasn't chorizo! That was lentils made to LOOK like chorizo. Well thank goodness because that didn't taste anything like chorizo. But also, patrons don't like being told they're eating one thing only to find they've consumed something completely different. That's not a good experience. There was also an "omlette" that we were encouraged to eat in one bite - another unpleasant surprise- the omelette was filled with some bitter semi gooey liquid. It was so foul I literally watched a patron at another table spit it out all over herself, in a near vomit reaction. By the time the 15th course arrived I couldn't wait to leave. The service however was excellent. If you like this kind of experience and food, you'll enjoy dishing out the €175 per person. We did not.

We were not impressed with the food for such a hefty price tag. We felt like some of it was plain, and some of the more intricate dishes were not explained well (although we loved a few dishes like the corn). It was a very creative experience but not my favorite. In one of the dishes, the server rolled up a "butterfly cocoon" in front of us. She rolled up rocks into my food and I had to spit it out. 10/10 for creativity but 3/10 for taste.
Sadly don't see what all the fuss is about.
My boyfriend and I came here for dinner one night and we got the "denjoy" menu aka an 18-course menu and a bigger pricetag. I wish we could have been told what the dishes would be ahead of time, if we had, we probably wouldn't have proceeded with the meal. The service is great, the ambiance is nice, it feels very upscale. Will say the presentation of all dishes were beautiful. They do a great job with not only plating the dishes but the way they present everything. In terms of the flavors (which I think is the most important part), I was very disappointed. The whole menu was "fungus"-themed which was immediately unappetizing to me. We told our waiter we were lactose intolerant but could still have dishes with butter and light dairy because we brought lactaid pills; we just wanted to let him know since he asked if there were any dietary restrictions. We think he may have misunderstood us and thought we said we were vegan because we were served things like a single stalk of asparagus, a block of tempeh, and their vegan take on a hot dog while people around us were being served steak. I was pretty horrified. And disappointed! The flavors weren't even that good, most were quite bland. One dish on a wasabi leaf I couldn't even eat, the flavor was extremely off-putting to me and made me nauseous. And I'm someone who's not picky with food usually, I eat everything! We eventually realized he didn't misunderstand that we were vegan because we were served some dishes with fish and pigeon. Never had steak. I think they're so strict about not removing dairy or cream from some of their dishes that they gave us vegan alternatives instead, but I wish we were asked and given the option because a $220 meal for what we had? No way. I wouldn't have even paid $100. Overall an extremely overpriced and disappointing meal.
