I feel like their format was more prevalent in the aughts. But I am SO grateful that they have stuck to it. You arrive with your party and they provide you a menu with a listing of items from lightest to heaviest (as in oysters at the top and duck breast or wagyu steak at the bottom). If you arrive with two people, they recommend four to six dishes, with a party of four, maybe eight to nine dishes. Keep in mind, each dish is meant to be shared and is timed perfectly to be delivered one at a time with careful attention paid to when your table appears ready for the next dish. THIS is the feature that makes the meal a great place to meet a friend to catch up over a bottle of wine and a wind range of delicious tastes to both indulge in and discuss (if you're into that). I have been going for years, typically with only one other person. However, for my birthday this year, my 10 and 12 year old kids asked that I take them to my "favorite restaurant that I always go to with my friends". I believed they were ready, and they WERE. They were so excited to try this "legendary" place that I always left them home to go to. The menu often changes but the two main stays that never seem to change are the beef tartare with crispy sunchokes and the endive leaves, drizzled with olive oil and served with finely chopped candied walnuts, anchovies and "ubriaco rosso" cheese (basically a pecorino romano aged in wine) -- my FAVORITE thing on the menu. There is a reason the two dishes mentioned above are mainstays. They are the best, in my opinion. I have never had a bad dish at Estela. We always get the oysters of the moment, usually ricotta gnocchi in a mushroom broth perfection. As far as the proteins go, those seem to change the most often. Last night we had the Mackeral with seaweed, favas and avocado the the wagyu with brussle sprouts and tallegio. Everything was excellent. I stand by my original assessment that the best way to enjoy this restaurant is with one of your best friends to share a bottle of wine as they deliver one small plate at a time. The format is perfection for that particular scenario, though my kids did rave about the beef tartare, the endive and the wagyu. Love You, Estela.
