From the minute that you walk into reception your impression that you're in a neighborhood sushi joint starts to evaporate rapidly. The evaporation is only accelerated as you are ushered past glass cases housing bottles of Hibiki. All this for me conspired to distract me from the food which was the truly arresting part of my index visit to Hachi.I brought family which allowed us all to sample more of the menu and give everybody a more holistic impression of Hachi the kitchen, and less of Hachi the restaurant. Tangential rant #1: I'm immune to pine, mood lighting, and expensive ceramics. I let my taste and smell make my mind up for me when it comes to food. I'll allow points for presentation, because we start tasting with our eyes, but everything else should matter very little. My point is that if ambience mattered less, then putting on this entire show would be all about devoting all the resources to making sure that culinary skill, quality ingredients, and respect for Momma Earth take center stage.The chirashi was a neatly packaged peek into the soul of Hachi. This wonderfully put together bowl highlighted an understanding of wa shoku, respect for the ingredient, experience in managing the ingredient, and masterful restraint in putting just the right amount of the sea's bounty on display for that bowl to be satisfying without being ostentatious.Other dishes demonstrated the same expertise and mastery, and notable mentions were the charcoal grilled cod (seasonal), and the negitoro don which was a bowl decadently overflowing with minced tuna, ikura caviar, and uni. Yes, Hachi is upscale, and the menus reflect upscale Japanese in crazy rich Singapore, but put that all that distracting nonsense aside, and you'll find a temple in which you can meditate on just how awesome nature's bounty is, and how little time we actually spend appreciating it.
