Nice culinary discovery
The restaurant is pretty and modest in size, and immediately upon entering you feel at ease. The meal was extraordinary. All the dishes served are delicate and delicious. The dishes are beautiful and neat. In terms of cuisine, nothing to complain about. The staff takes great care without overdoing it and it works perfectly. We had asked for a signed book, which we received at the end of the meal, a big thank you. If we could allow 2 small points to improve, it would be to point out that the only table for 6 people is opposite the front door from which we had a lot of draft and therefore cold. Our prior wish when booking was to have a quiet table. If we had known, we could have at least prepared for it and, above all, dressed accordingly. The second point that deserves improvement would be that even if the chef has to take a train, he manages to free himself and spend a few minutes with the customers who also come to exchange a few words about his cooking.

Every dish was worse than the last (except artic char which was ok... not great). Every table around us was expressing feelings from disappointment to dismay... and I would hesitate making a booking here in future. There are so many wonderful Michelin restaurants (and non Michelin) in Paris but this restaurant either had a horrible night or isn't one of them.

Excellent meal around the Jura
Really very good, cuisine both very fine and delicious. We clearly find the markers of Jura products, in a gourmet version. We feel real research and authenticity. We particularly enjoyed: mousseline/cancoillotte, mackerel, gnocchi and arctic char. Less convinced, however, by the lamb/strawberry combination even if the meat and sauce remain superb. Fairly extensive and affordable wine list. Finally and above all we had an excellent time thanks to the kindness and professionalism of the staff, always smiling, it's pleasant. We were with a young child and they were particularly friendly and attentive! Thanks to the whole team.
Worst experience in a Michelin Star restaurant
Very bad experience overall. Mediocre food. Very bad service! Inedible desserts. Only took one bite. Waitress picked up the dessert plates and didn’t bother to ask if there was something wrong. Chef didn’t bother either. The staff cared about selling services. Asked us if we want apperitif before lunch time . When said no, asked if we want coke or juice… Place quality a d service went down since they got a star. Used to be a good place . Don’t go there or waste your money.
Perfect market menu
We had the market menu served at lunchtime. It was perfect! Perfect proportions, everything was delicious. The Gin and tonic butter was surprising! I really recommend this restaurant and I will come back for the evening meal with my husband

The place is perfect for spending a good evening. We were there for my husband's birthday and we enjoyed some magnificent dishes.
Hmmmm. Not sure what the hype is
Casual restaurant where the food was creative, no doubt. 3 fixed menu options at 130€, 155€ and I think €195€. Food was very good but a couple of the dishes were too citrusy and tart. Service needs improvement. Not rude but certainly not friendly or engaging. My issue is the price to quality ratio was way out of whack. I had read the wine pricing was reasonable and a comprehensive list. I didn’t find that to be the case at all on both. We ate at Taillevent, a 2 star Michelin, the night before and it wasn’t that much more expensive. Not a good value and can’t recommend. My rating is based on value, not the quality of the food.
A delicious taste and visual stroll
Birthday evening in April 2024 in the gourmet restaurant Substance. Very nice culinary discovery for all the dishes offered on the Immersion Menu. Congratulations to chef Mathieu Marc and his entire brigade. The presentation of the dishes is very elegant and our taste buds were challenged to discover original and very well executed flavors. The service is efficient and attentive. We had a table for 2 people and the advantage was that where we were seated, the tables were not next to those of other customers, which allowed us to chat in complete discretion. Just a note regarding access to the toilets which is at the bottom of a fairly steep staircase...of course, it's not very glamorous...but with high heels, the first 3 or 4 steps do not have handrail....for the following, there is a ramp which greatly facilitates the descent of the steps.
Formidable
This was a fantastic culinary experience. My partner and I came here to celebrate her birthday and we got the Immersion menu without the wine pairing. We were seated near the kitchen window, which was nice. The staff was kind and attentive, and happy to answer any questions we had about each dish. Each course was delightful. The bread with the gin and tonic butter was a great touch as well. Merci beaucoup à Matthias Marc and his team for making this evening a memorable experience.

Tremendous
After an exceptional dinner at Substance in March, I came there for lunch for the first time. The market menu is excellent, generous, full of flavors, aesthetic and despite its low price is in line with the chef's cuisine. Efficient service with the right pace for a business lunch. Bravo and thanks to Matthias Marc and his team.
Amazing experience
Our experience begins with a very warm welcome from a very professional indoor team. While offering us to make our choice of menu (which in fact is simply to choose how many dishes we wish to taste) the waiter asks us if we have allergies, intolerances or tastes that we do not like, and immediately offers alternatives. We have an aperitif accompanied by small discounts which will tell us the level of the experience… Then the plates follow one another, each more incredible than the last, to the point that we wish there would be no end. Our only regret is not having had the opportunity to send our compliments to Chef Matthias because he was not present that evening.

And there… problem the beginning is just crazy and the rest is not at all especially the finale with a pumpkin dessert but what an idea… there are so many possibilities we are at the end of March we aspire to the sunny days for lightness we have to stop these processed desserts and go back to classics, there's nothing better!!!

Not Michelin star worthy
I’d booked Substance for my last meal in my 1-week trip to Paris and hoped that it’d end my trip on a high note. Unfortunately, the experience turned out to be forgettable. I took the 6-course tasting menu (130 euros) and wine pairing (70 euros). The dishes included hits and misses. The gnocchi entrée and the pumpkin dessert were very good. The deer main course was quite good. The other dishes, particularly the mackerel entrée, were mediocre. As a solo diner I’d a seat at the far end of the counter. Although I’d see the chef and kitchen staff in action, the staff passed behind my back and came get the dishes at the counter numerous times during my dinner. Sometimes they even kicked my seat inadvertently. No intention whatsoever to return.
Sublime and memorable experience.
We are lucky to have discovered some very beautiful restaurants, and Substance is one of the most striking, both for the cuisine and the service and the atmosphere as warm as it is professional. The flavors are marked, it is a cuisine of terroir and conviction, but with real refinement, real elegance and superb taste quality. The sauces and juices are truly exceptional. The choice of tableware really contributes to the graphic quality of the dishes and the pleasure of tasting. The service is warm and thorough on all questions. We feel that everyone is happy to be there and that there is a real team spirit. It's very nice. As François Simon would ask: “Will I go back?” With relish on our part and I highly recommend that you live this experience.

A better name would be Pretentious as there is certainly a severe lack of Substance. Trying to hard to be avant-garde to actually BE avant-garde. Clashing ingredients does not make you a Creative. Passion fruit seeds with coriander seeds on white fish?!? Black garlic & chocolate sauce for a desert!!? We will never get that taste out of our memories. Lack of understanding in what service and hospitality means. If you do not want non-French patrons don't accept reservation requests. It's no longer in vogue to treat us like pariah. Michelin should remove the star immediately.
Top notch Lunch experience
One of our finest and most enjoyable meals ever. Deserves more than 1 Michelin star. The staff work as a great team and are friendly and knowledgeable. Great use of fresh local ingredients to create unique dishes that are not over-the-top or too-clever. Expansive wine list with some good prices and unusual regions (eg: Jura and of course a huge champagne selection. We had the 6 course tasting for lunch and it was just the right amount of food and took a relaxing 2 hours.

Your bid has been “matched” with a reservation. From the time a reservation has been located, the seller of the reservation must connect with moderator to give transfer information for reservation. If the seller;however, does NOT respond to reservation transfer, then your bid is reprocessed and returns to the first step, which is connecting your request to a reservation.
