Menya Inoichi stands apart from the average ramen shop in Japan.
Ramen has enjoyed a surge in popularity as the world discovers it through celebrity chefs like David Chang (Momofuku). But in Japan, where ramen is a classic staple like steamed rice and street corner vending machines, differentiation is hard to come by. It’s easy to take ramen for granted. Ramen is ramen.
But at Menya Inoichi ramen is something different.
Here, simple ramen has been perfected and reimagined. Each element receives special attention - impossibly tender wagyu beef is sliced perfectly thin and grilled with a hand torch just until the highlights of caramel, smoke, green grass, onions, iron, and salt are exposed. Bonito flakes are shaved to order in a machine you might find at the best New Orleans snowball stands. The broth is the centerpiece not the backdrop, full of deep, rich seafood flavor. The noodles are thin, firm, and full of flavor. The pickled accompaniments are crisp and fresh, not the jarred afterthoughts so common at stand-up ramen counters.
One surprising find at this clean, quiet shop four blocks south of Nishiki market was the peach soda, made to order with fresh-diced peach, sugar, and soda water, served with a bamboo mixing spoon. The full freshness and flavor of the peach was explosive on the palate. I expect less flavor might be found by eating the fruit itself - the combination of soda and sugar opened up the aroma and enlivened the taste until it was all-consuming. I would recommend Menya Inoichi just for this drink.
The service at Menya Inoichi was perfect: attentive, helpful, friendly, and unobtrusive. There is a reason this unassuming ramen shop is on the Michelin watch list. It’s a new approach to an old favorite, presented flawlessly, to enlighten and delight. Worth the wait and the effort to find it. My strongest recommendation for a new experience with a classic dish.
