High level dinner last night at the renowned Stay restaurant in Dubai located inside the prestigious One & Only the Palm hotel. Everything strictly perfect.
Be the first to ReplyExquisite
Had long planned to pay a visit to Stay. Took quite a while to actually find the perfect time to do so. The venue is located in One&Only The Palm. A marvellous resort with impeccable aesthetics, and such aesthetics naturally extend to the venue itself. You have to be there to experience it. Outdoor seating area is free of flying insects: a huge plus from the get-go. Spacious floor plan, simple table setup, fantastic linen, gorgeous glassware. I somewhat remember seeing the same brand of glassware in a one-star in Geneva. Just beautifully light and elegant. A very interesting wine list. Healthy blend of old and new world with a main focus on French wines, of course. Some 250+ labels if I’m not mistaken. Signature cocktail list seems a bit too reserved. It looks good and does require a moderate level of work, but it’s not interesting enough to for my taste. Personal preference, I guess. Decided to go with the Experience Menu. A solid 7-course menu including amuse bouche and pre-dessert. Bread and butter looked fantastic. Starting off with artichoke ice cream with caviar, hazelnut oil, pine jelly and grated coffee. Love a classy savoury ice cream. Light, pleasant, fragrant. King crab was a strong first appetiser. Crab meat gently coated with cream cheese, delicious and nearly gelatinous nori broth at the bottom, drizzle of herb oil on top, dill and pea shoots all over. Strong aesthetics, delicate flavours, pure comfort. Sturgeon nonnette was a surprise. A savoury twist on the nonnette with sturgeon, eggs, butter, flour, and a layer of caviar in the middle, with a texture that nearly resembles soufflé. Savoury cream on top, and an extra bit of bacon extraction. Beautiful dish with intense flavours: intense yet well contained. Had the pleasure of sampling a small plate of the portobello mushroom and bread risotto by courtesy of chef Ilya. What an astounding dish. Beautifully cooked portobello in the same style as abalone, delectable risotto made with brunoise-sized croutons, rich and savoury herb sauce. Fantastic vegetarian option. Resumed to the menu with a sea bass aiguillettes. Thin veil interwoven with calamari and aromatics coating the sea bass, which was poached in brown butter. Velvety celeriac puree which had a hint of white chocolate: very much felt like the classic style of milk-poaching and blending with white chocolate chips. Lovely. Sorrel and watercress sauce. An exemplary 2-Michelin-star fish course. Meat main was an A9 Aussie wagyu and portobello mille-feuille (I know, right), parsley puree, braised lettuce, beef jus, and beetroot jus. You have to be there to try it for yourself. Imagine the essence of Michelin Guide and Gault et Millau manifesting on one plate. This was one of those dishes. Pre-dessert was orange in four ways: jelly, foam, pearls, mini-segments. Complimented by cinnamon and dates, the level of attention to detail in this pre-dessert is wonderful. Finished the meal with a gorgeous barley ice cream. Cognac-soaked raisins at the bottom, button mushroom foam over the ice cream, cognac jelly, and puff pastry made with cocoa powder on top. Finesse, class, and beauty. Stay by Yannick Alléno demonstrates the culmination of a master chef’s career path. So many restaurants in Dubai bear a famous name, but fail at representing what that name really signifies. You simply cannot miss out on this restaurant for its heartfelt hospitality and stellar culinary experience.
Be the first to ReplyDisappointed!
The service and the staff were great, very attentive and helpful. However the food was tasteless and almost impossible to eat, for a 2 star rating it’s a disappointment. We had dinner at a Pavilion ledoyen in Paris and it is nothing compared to what we had here, the flavors or even the plate presentation was like they put to much effort to it. We now understand why the place was quite empty!
Be the first to ReplyA must do for a foodie when in Dubai
When in Dubai there are no shortage of exceptional dining options and this has to be right up there. From the moment we arrived to the moment we left we felt valued by a friendly, efficient and clearly well trained team and the food was fantastic, certainly living up to its 2 * reputation.
Be the first to Replya real disappointment ...
We were very, very disappointed. The food was fatty and tasteless, and the presentation on the plate was unappetising. A non starred gourmet restaurant does it better, In terms of service, the staff are really very nice but lack the training required for a 2-star restaurant. Really very disappointing because the cost is that of a 2 star restaurant (that it's not worth it at all) and because the location is really superb (the restaurant is in one of the One & Only in Dubai which is just superb). To be honest, we were very surprised because we've had the chance to dine at the Pavillon Ledoyen in Paris several times and it's just nothing like it. Generally speaking, Michelin-starred restaurants in Dubai are not as good as those in France for example (not the same level of service and culinary standards) but we've never seen anything like it...

The beautiful restaurant Stay is my husband's favorite restaurant. During our stay here, this establishment is always on his bucket list, he likes to dine here at least twice. The menu features all refined dishes, but he comes back for his filet mignon. When he heard that chef Renaud Dutel was no longer in charge of the kitchen, it was quite a shock for him, but the new chef Ilya Evdokimov is also amazing. His filet mignon was perfectly prepared. It has taken a long time, but we finally there have a woman restaurant manager at O&O. We met Maria, the new manager, and as far as we are concerned, she is an asset to Stay. Last but not least we have to mention the wonderful staff and the incredible service that they provide.

Absolutely incredible dinner!! From start to finish. The food was delicious, creative and beautiful. And the service was impeccable. Shashi was informative, thoughtful and made us feel welcome from start to finish. Wine pairing was stunning!! We have been on a four week honeymoon and have eaten in Michelin star restaurants in 6 countries and this was by far the best experience. A++
Be the first to ReplyBest Meal - A Must When in Dubai, 2 Michelan Stars so Deserved
My fiance and I flew from the US to propose to one another in Dubai, and our celebratory day of engagement dinner was at Stay by Yannick Alleno. This was one of the best meals of our life, and an experience that we will never forget. Everything was exceptional, and absolutely lived up to the 2 michelan stars that Stay deserves. We arrived at dinner and rose petals were on the table and we were given a glass of champagne. The food was unbelievable--new flavors mixed together that we had never had before (like red mullet with bone marrow) or flavors that were executed with perfection and elevated to something new (crispy lamb with potatoes and lamb jus). The bread is also made in house and was the best we had ever had, we especially loved the "tiger roll." We got two bread baskets! The wine pairings were divine and transformed and complemented each dish. The service was phenomenal, the chef came out at the end to check in on the meal, and everyone was so thoughtful in wishing us a happy engagement. We received a cake at the end of the meal as a congratulations, which made the night even more special. This was the experience of a lifetime, and it was an incredible way to celebrate our engagement. The decor, vibe, and luxurious ambiance was wonderful (the restrooms are also beautiful). Thank you, Stay by Yanick Alleno!!! This is a MUST for anyone who visits Dubai.
Be the first to ReplyGreat 2 star Michelin dinner during a long layover in Dubai!
We had a delicious dinner at this 2 star Michelin restaurant. The service was excellent. The food was delicious and beautiful. They were wonderfully elevated versions of some French classics. We especially liked the lamb saddle and the pear tartin. The techniques employed and the sauces were amazing for each dish. The restaurant is gorgeous and elegant. We really enjoyed eating in the outside area. We are so glad we made the effort to eat at STAY during our long Dubai layover.

What an experience. Superb and opulent ambience, with service and food to match. Lives up to its 2 star Michelin rating. You will not be disappointed. I have experienced gourmet dining at some of the best Michelin rated restaurants in Paris, London and Rome. This Yannick Alléno Restaurent is on a par with the best of them a memorable experience I will repeat on my next trip to Dubai.

OMG! I have no words to describe the culinary haven we experienced at STAY. We tried the six course tasting menu and were blown away with every single dish, flavors and presentation. The service was beyond impeccable. Sash was so helpful, knowledgeable and engaged with us. He basically became a dear friend by the end of the dining experience. We were celebrating my mom’s birthday and got a ton of small surprises from the restaurant. I will fondly remember the dining experience at STAY forever and will certainly come back when I am in Dubai next time
Be the first to ReplyWorst 2 Michelin star experience ever
The service was good but food had nothing outstanding that you would expect from a 2 Michelin star restaurant. We have visited a few in Europe and US. Surprised how it got a Michelin rating. Ended up enjoying the baguettes instead which were good. Dessert not bad either but not wow. Maybe was expecting something wow which was just not there at all!

We had an exquisite dinner at the Stay by Yannick Alleno. The food is an absolutely two Michelin star standard. The amount of work and creativity put into each dish is astounding. Renaud Dutel is fantastic at following the legacy of Yannick Alleno. The service is exceptional. Shashith was waiting on us with utmost care and courtesy which added to the refined experience of this excellent place. I would highly recommend Stay and would be looking forward to my next visit here.

What a place! What a meal! What service! This restaurant fires on all cylinders. Spendy, but then that’s always true of 2 star Michelin restaurants. Had the “sushi” appetizer and Waygu for the main, both outstanding. Décor is stunning, as is the lighting. A must, especially if you’re staying at the One & Only Palm.
Be the first to ReplySTAY has absolutely THE WOW factor!
Restaurant Stay has awarded with Michelin stars. It has taken too long for Michelin to see the light and that is probably as well the reason why they awarded STAY immediately with two stars. Chef Renaud Dutel and his kitchen crew have put together the best of the best. The correct service, the well-selected wines have naturally also contributed to the Michelin rating. Diner at STAY has absolutely THE WOW factor!
Be the first to ReplyTruly 2 stars
Very enjoyable evening. Excellent menu and wine choice. No hush rush. Very sophisticated. Top people working here. Truly 2 Michelin stars. Trying our most of the other Michelin star restaurants but STAY really stands out in comparison.
Be the first to ReplyFantastic, unfussy service, subtle creations. Well worth its two michelin stars
Really enjoyed dining here. Chef Renaud leads a fantastic team. The Langoustine tart was a particular highlight of the meal. Will come again - thoroughly deserves its two michelin stars. Would recommend combining it with a pre or post dinner drink at 101 on the Palm.
Be the first to ReplySatisfying and memorable dinner experience at Stay.
The service was impeccable, attentive but not intrusive. The menu was creative, interesting and pleasantly surprising. The waiter explained every single dish to small details. I was impressed with her knowledge and memory 😊 the chef came to interact and tell a story or two. Harry and Vincent were extremely friendly and made us feel very special. They clearly care about customer service and making sure you are enjoying yourself. The stand out dish for me was the local fish carpaccio, zucchini blossom flower stuffed with seabass, the lobster, the bread basket. The sommelier was super helpful to choose the right wines that goes well with dishes. I’d recommend this place if you appreciate food and want to taste something tasty and different. Thank you Stay team for looking after us.

I was here on June 2018. Still have amazing memories about this place. Great food & service. Really wish to come back and try something new in here. Highly recommended, is not cheap but totally worth it! Of course beautiful resort and location.

We had a fantastic dinner in The Stay by Yannick Alleno. Our seating was outside, in a lovely quiet ambiance. The table was sprinkled with rose petals as they knew that we were celebrating a special occasion; an important touch which makes you feel taken good care of. We had the 6 courses experience menu. Especially the king crab topped with farmhouse cream and the crispy milk fed lamb with agria potatoes were exceptional. The service was very attentive. A great fine dining experience…

Very nice atmosphere (sat outside ) with great service and attention to details .
Food was excellent,my husband enjoyed the special truffle 4 course Menu ,with each course arriving giving excellent flavors .
Would definitely recommend it if you like French food !
Exceptional
We have never been disappointed at this restaurant and even living through a pandemic it has lost none of the attention to detail in any way.
It so lives up to its expectation of true fine dining. The food is elegant, refined and a work of art on the plate. The flavours are delicious and sublime. For us there are no words to sell this restaurant because it speaks for itself. Portion size is as it should be in line with Michelin star.
The service impeccable.
Just Fabulous!
We ate at STAY twice during our time at the One & Only. Both meals were superb and the service exemplary. My wife is a vegetarian and although there were limited options, Harry the restaurant manager (a very knowledgeable and charming man) arranged for an alternative Main Course on our second visit. We would highly recommend and will certainly return.
Be the first to ReplyA Wonderful Meal!
The setting is beautiful and tranquil which makes for the perfect back drop to what is a lovely meal.
The tasting menu was exceptional and each of the dishes tasted superb, as was the wine pairing.
The Manager Harry who served us is charming, knowledgeable and fun, he rounded off what was our favourite meal of the trip.
Having been to Dubia many times, this is one place I also return to and cannot recommend it highly enough.
