Went there for lunch on a Sunday and chose to seat at the bar counter bar expecting to see the master chef preparing the highly rated sushi. The 2 of us ordered the omakase menu ($120 per person + tax) and what follows was a very mixed experience.
There were 3 people preparing the food. The chef was at the far end of the counter entertaining some regulars and spend quite a bit of time talking to his Japanese customers which was ok I guess. The middle of three was more experienced and kind of kept an eye on the young apprentice who happened to be right in front of where we were seated.
The initial dishes like sashimi and the fried items was prepared by his apprentice and even that we have no issue with.
What was rather unprofessional was when food were put together in front of the guests they made all kind of mistake - 2 mixed platters being served but with items missing from each plate. They were brought to us and then upon being spotted took back and re-arranged. Poor chap was then given a scolding too. Then the sashimi which came without the wasabi and again have to be taken back to the counter and have it put back. The mini chirashi was meant to come out pyramid shaped but in the process kept collapsing and attempts made to put back up. He eventually gave up and just squashed the whole thing and flattened it. There were so many more unfortunate moments exposed in front of us.
When it comes to the sushi, they were indeed prepared by the main chef working at the opposite end of the counter. He was still busy drinking sake and beer with a larger group but managed to bring over 2 pieces of sushi at a time to us and quickly introduce the name of the fish in japanese before retreating back to his end of the counter.
So what did we think of this mid market Sushi place?
The price is not exactly mid market (for $120 you can order something decent at Shinji during lunch time) but to be fair the food here especially the sushi is of high standard.
It felt like seating in an episode of Gordon Ramsay's hell kitchen minus the swear words. We felt embarrassed by the amount of mistake on full display in front of paying guests.
I think it is mostly the fault of the oversight chef, to place someone who is clearly out of his depth to work in the front facing role. And the chef was too pre-occupied with the regulars and more or less ignored us during our 90 mins visit. Unlikely to go back again.
