I booked this over a month in advance and have been looking forward to the meal since my friends rave about this spot. When I arrived I noticed two counters on the left and right and I couldn't tell who was the chef. I realize that they have different people assembling the hand rolls. I decided to order all the fish that I like rather than getting the combos. The rolls started out good (kani/crab was my favorite), but I thought some rolls had a bit too much soy sauce so I asked for less soy sauce. The person assembling our rolls told me that the rice is pre seasoned but she will season the fish less. As a result the rest was under seasoned, and I could taste the fishiness in some of the fish; I regretted asking for the fish to have less soy sauce. We tried every handroll except for the salmon one, and also tried the wagyu specialty roll. I did have some sauce left on my plate so I dipped the wagyu beef into it and it tasted better. I liked that the rolls here didn't fall apart (maybe because of all the rice), and the seaweed was easy to bite off so my husband and I were able to share every roll. I wasn't a fan of the albacore tataki because it was swimming in ponzu sauce.
