During the holiday season, I asked one of the waiters, "are you open tomorrow (would be Christmas Day)?"He says, "We're open every day."And they were. So, we had a fallback for any day others were closed. The pasta is made fresh in both locations (which are rock-throwing distance apart). I mean you are literally watching one or two 'operaio di un pastificio' craft pasta of all sorts from big balls of dough. It's theater, but the performance doesn't end when someone carries a big board of this just-made stuff off to the kitchen. It comes back as Carbonara or Cacio e Pepe, or Amitriciana. Seeing the pasta being made among the tables is a treat. The payoff is very good and it's always perfectly al denté. The pizza is better than run of the mill, with a nice chewy crust that stays a part of the experience until that bite is done. We had the Napoli (2X) and the Margherita. But, wait. The surprise meal here was the polpette. We were eating pizza and the guy next to us got polpette. Just meatballs, no potatoes or other side. Just mounds of tomato sauce. So the next time we came in, we ordered them. They were as good as they looked. So, at least order some to share with your friends. You'll all be glad you did. We ate here six times over 17 days in Rome. It was admittedly in our neighborhood and a sure bet for nights when we wanted to take a break from walking and taxis.
