The fact that it has two Michelin stars guarantees the quality and high level of the culinary experience, but then all this must be confirmed by the evidence of the facts I can confirm that the dishes offered in the "historical dishes" tasting menu are delicious and refined. They make Chef Valeria's idea of offering traditional Maremma peasant dishes heard. The wines, proposed and paired with the dishes, are up to the standards of the cuisine. Well, well done, encore!

What is the point of communicating allergies 1 month in advance if nothing is changed? Dishes from the tasting menu not served and others not adapted. It's a shame because the other diner, not allergic, had a good dinner. Worth trying if you don't have allergies!

Today I had lunch at Caino with friends and I just have to say thank you. Restaurant 🔝 I had been here many years ago, I remembered a superlative experience and it was a confirmation. I came with a twin (I write like this because Andrea understands) and other friends, we did a tasting journey chosen by Andrea and it was perfect. I'm not going to list the courses but from start to finish it was a succession of delicacies. Dishes presented with care, refinement and superlative taste. Stratospheric wine pairing. Fabulous place, courteous and professional staff. Thanks to Andrea, to his collaborator in the room whose name escapes me and hats off to Valeria. Each dish was a poem, an emotion, a confirmation of taste and passion for cooking, the real one. We will be back😘

An event
We go to CAINO for important occasions: we went for my wife's 40th birthday, for my son's eighteenth birthday, the shopping is important and for us Caino must be a memory that frames a "heartfelt" event. We went on Thursday, for my son's graduation! We chose the historical menu (I don't remember the precise name) I think that's what it's called, oh well! Friggitelli ice cream, garlic ice cream... macaroni with peppers and rabbit? Maybe you couldn't tell from the flavour, lamb... I don't remember. That's what I can say, I don't remember! What I remember instead were the menus from past times: morsels of pork belly that looked like chocolates, extraordinary fish carpaccio, unthinkable and unforgettable sweets. Not this time! This time it seemed like we had ended up in those restaurants in tourist villages that serve "international" cuisine because everyone has to like it. Mrs. Valeria, you are capable of amazing things, please find your way! Perhaps it is the period: summer is not yet over and winter has not yet begun, we are in a middle ground where the raw materials are not yet defined, I hope that the "winter" menu brings back the flavours, aromas and especially the fantasy that I know is his.
